TO CLEAN A CAST IRON PAN
A little of the oils in the foods bonds to the surface of the cast iron pan. This is known as seasoning – the pan is ‘seasoned’ this way. Protect the seasoning, the layer. When you’ve finished using the pan, clean it in hot water and with stiff brush, no soap. No soaking, the water will allow it to rust. After washing, dry it and put it back on gas ring at low heat to dry thoroughly. When dry add a few drops of vegetable oil and wipe all over with kitchen paper. Change paper towel and rub until all the excess oil has been removed. Turn off heat and let it cool before you put it away.
